Would love to find footage of Gavin Creel (whom I saw live but would love to relive) and/or Jeremy Jordan (whom I did not get to see) as Dr. Pomatter in Waitress.

I saw each cast of Kiss of the Spiderwoman. Nobody matched Chita. Bebe was- what's the word?- precise. But there wasn't the electricity.
I saw the original cast of Les Liaisons Dangereuses thanks to strings pulled and it was one of the most breathtaking shows ever. It was such an unexpected "event" show, too, and London hasn't felt as exciting as it did then for quite some time.
I'd also love to see the Ruthie Henshall/ Tracie Bennett she loves me again- it was a dream cast.
Your profile photo reminds me how much I’d love to have seen footage of the Prince Edward productions of Hunting of the Snark and Children of Eden, along with Judy Kuhn in Metropolis. Each for their epic sets, staging and casts.
Those were epic sets- the current generation is unfortunate not to have experienced the beauty of Snark's enormous starcloth and stunning projections or Napier's massive 3-tier globe inside the Prince Edward.
They make "impressive" sets in recent shows seem very small.
The original company of West Side Story, specifically Chita's performances of America and Dance at the Gym. After watching Broadway: The Golden Age, I would love to see Laurette Taylor's performance in The Glass Menagerie.

Yes! That would be amazing! At least we have Rex's performance in the movie, but I would have loved to see Julie as Eliza. Her Mary Poppins acceptance speech still cracks me up.

The late, great Philip Bosco was actually a family friend, and I’d absolutely love to see his Tony winning performance in Lend Me a Tenor. I can still remember how Bosco gave my family a backstage tour of Chitty Chitty Bang Bang when I was a kid. Specifically the moment when the actor playing the Child Catcher jokingly offered to babysit. Moving back to Lend Me a Tenor, it would just be a dream come true to see what was apparently Bosco’s greatest performance.
I also would’ve loved it if the original Broadway cast of Sweeney Todd was taped. While I appreciate the tour with George Hearn being taped, it really would’ve been better if there was a pro-shot of Len Cariou’s towering performance in the superior Broadway production. George Hearn was an amazing Sweeney, but Cariou’s original take on Todd is untouchable to me. At least there is a tape of Cariou in the show though. It may not be the best quality, but the sheer perfection of that production makes up for it.
I saw Spider-Man 1.0 and it was indeed bananas. There are some quite lengthy threads on here from that time, including one documenting the night that Chris Tierney fell off a raised platform and down into the stage and was seriously injured (and miraculously returned to the show once he recovered).

I think you missed the part of the question that says "archival footage," which is perfectly legal. Also, as an example, Betty Buckley has bootlegs on her YouTube page, so, clearly, not all actors feel disrespected by them. In fact, I'm sure that many of them are very happy that their performances have been recorded for posterity.
Other than the Lincoln Center archives, I can't find any footage of the original production of Godspell, either at the Cherry Lane or at The Promenade. There are a few talk-show appearances on You Tube, and some great footage posted by original cast member Peggy Gordon of the 10th anniversary production, but none of the original. Sigh.
