There's also Victor/Victoria with Julie Andrews (the stage version not the movie) and Peter Pan with Cathy Rigby. Some of those titles that Josh listed are not available to purchase but you can get them from traders.
A Tale of Two Cities (the musical by Jill Santoriello) was recorded by PBS a few years ago also, with a lot of the original Broadway cast (James Barbour, Brandi Burkhardit, Natalie Toro & Kevin Earley). Sort of concert, sort of staged. Narration by Michael York as its only an hour and a half, I believe.
The Ten Commandments with Val Kilmer, Lauren Kennedy, Kevin Earley & Luba Mason was also recorded out in LA - the show never make it to NY (Thank God!)

The Royal National Theatre OKLAHOMA! BluRay/DVD ( with Jackman et al) includes a lengthy Behind the Scenes feature. It's kind of shocking to hear that Curly has an Australian accent, Laurey and Aunt Eller speak with British accents in real life
The creative team included Trevor Nunn, Susan Stroman, and Warren Carlyle assisting Susan as choreographer.
Cats was most definitely not filmed live. It was filmed at the then vacant Adelphi Theatre while the original production was still running at the New London Theatre. There was no audience present and the score was indeed prerecorded.
Victor/Victoria was filmed live, though I think the DVD is now out of print.
The Will Rogers Follies was also filmed and aired in Japan.
PBS filmed a few productions at Papermill for Great Performances back in the late 80s/early 90s. I've seen parts of their Show Boat and Crazy for You.
City Opera's first mounting of A Little Night Music was also filmed for Great Performances. At one point the whole show was on YouTube, not sure if it's still there or not.
Well, for that matter, Live From Lincoln Center filmed various shows - but they are not for sale, though pieces are on YouTube.

There is a theatre camera view of Pacific Overtures in Los Angeles on YouTube, but I believe that was the original Broadway cast, since the show had just closed on Broadway.

There does exist a recording of the original Little Shop of Horrors off-broadway. I've never seen it, but I know someone close to the project who owns a copy.
Another non-English recording would be the Hamburg production of Tanz der Vampire in 2005. Elisabeth also had another proshot, if I'm not mistaken, with the original cast. ^
