The thing with Lin-Manuel doing the Loud Hailer in Les Mis made me wonder how many other examples there are of performances like that, where a celebrity/well-known person does a cameo for one performance. The only others I can think of are:
-Mel Brooks as the Judge in The Producers
-Jason Alexander as the Doctor in Fish in the Dark
But I'm sure there must be others!

I'm pretty sure it was on The tour, but Dick Van Dyke did a one night cameo as a bank worker in Mary Poppins.

Guillermo(fron live with jimmy Kimmel) in Aladdin. The view host in wicked. The bachelorette(?) in Aladdin. Whoopi in the lion king.

Michael Strahan (former NFL player, sports commentator and co-host of Live with Kelly and Michael) was in a single performance of Kinky Boots.

NY Mayor John Lindsay did a cameo in "Seeasw" in the 70's, stepping in for the first number ("My City"
for John Gavin, who looked very similar.
