If I were to choose one (and I may, as I'm considering a NYC trip as well) I'd go with Godot because Michael Shannon is one of my favorite actors and I'd love to see him live in his favorite wheelhouse of absurdist comedy.
Dracula is the most enjoyable by far, but if you want to see a particular actor, I would choose the show based on who is starring in it. I think you will enjoy seeing such talented performers in a more intimate off-Broadway setting.

I'd be interested in seeing Translations. I can't speak for the merits of this production, but I'm definitely interested in the parallels between Ireland/Britain and Ukraine/Russia. The national theatre of Ukraine recently staged its own version, replacing the Irish language with Ukrainian, and the English language with Russian.

I saw Translations for the first time the summer before last at the Abbey in Dublin as was mesmerized. An exquisitely moving play if done right.
SCENE PARTNERS was one of the most mind-numbingly boring and horrible nights I have ever spent in a theatre and it wasted the talents of a lot of excellent actors.
