They don't do much live singing in film (None of the Producers was if I remember correctly), largely because the voice can't hold up to multiple takes. In fact, to my knowledge, "At Long Last Love" and the Bette Midler "Gypsy" are the only ones that did onset singing.
Fun Factoid: "The Wizard of Oz" was the first movie to use the lipsync technique.
I think Madonna's dying lament in EVITA was live as she talk/sung it unlike what is on the film soundtrack. Also that little bit after "Don't Cry For Me..." where she sings "just listen to that the voice of Argentina, we are adored, we are loved" sounds like it was sung on the set.
Another reason Is that one 5-minute number can be made up of dozens if not hundreds of takes and camera angles, shot over multiple days. Not only the energy levels, but also the variations in sound levels for each shot, outside noises, equipment sounds, etc.
Susane Stromen said in the commentary "Because they could all sing well, we filmed everything live. After the fact, we decided whether we should use the soundtrack or the live."
Also.... I could tell "Miss Baltimore Crabs" was because of the way she said souflees (sp?). It was different in the cd then on the movie. Yes, I'm very observant.

I think Sweeney Todd was the first movie-musical I've seen in awhile that wasn't distracting because of the lip-synching- it was done very well.

Across the Universe??? Cant remember the vocals in the movie too clearly, but on the CD, the vocals sound more digitally sweetened than just about any other in my recent memory...
