If you studied with the teacher, it might be nice to sing something you learned with him/her that has meaning for you. Alternatively, you might sing something that exemplifies why the teacher was so beloved. For example, if he/she was known for exposing students to new ideas, "Open a New Window" from Mame might be appropriate.
