If you're thinking of the 1998 revival orchestrated by Bruce Coughlin, then the orchestration is like this: (I can't be too sure about the reed doublings, but it's the best I can do)
Violin I-II Viola Cello Bass Reed I (Flute/Piccolo/Recorder) Reed II (Flute/Recorder/Clarinet) Reed III (Clarinets) Reed IV (Oboe/English Horn) Reed V (Bassoon/Clarinet) Trumpet I-II Trombone Bass Trombone/Tuba French Horn I-II Guitar/Mandolin/Zither/Autoharp Keyboard/Accordion Percussion
OOHHH, sorry. I thought you meant the most RECENT production. You want the current? Sorry, I don't know the orchestrations to that yet.

I agree with you. I watched a video of the bows and the orchestra sounded great. He had a good sized one for EVITA. So I see no reason to cut down the orchestra for SOM.
I just was on the new SOUND OF MUSIC website, and I see it is the original Robert Russell Bennett orchestrations and Trude Rittman arrangements from 1959.
I'm going to hear the orchestra right now and hear how it sounds.
