Seeking to share with U.S. consumers the diverse tastes of their beloved homeland cuisine, three acclaimed Chilean chefs have signed on as Foods from Chile brand ambassadors, creating tantalizing recipes exclusively for the awareness-building campaign. In a series of behind-the-scenes videos, the rising culinary stars introduce each recipe, and spill the beans on their tricks of the trade, culinary inspirations and more.

Meet the three young innovators who are helping to define the taste of modern Chilean cuisine:

Chef Matias Palomo: The Globetrotter

Chef Matias Palomois the genius behind Santiago's critically acclaimed Sukalde restaurant, which earned a designation on Food & Wine Magazine's Go List in 2008. Palomo serves up traditional Chilean recipes seasoned by the culinary influences he learned while working in Spain, New York, France, Italy, Mexico and South America. Driven by this global perspective, Palomo is passionate about introducing Chilean foods to a global audience: "The diversity of our culture and our native ingredients are so unimaginable," says Palomo. Chef Rodolfo Guzman:The Adventurous Entrepreneur

At Santiago's Borago, ranked among Latin America's top 10 restaurants, Guzman brings to life the varied flavors of Chile in Santiago's hottest tradition-oriented kitchen. This inventive chef traverses all 2,700 miles of Chile's diverse terrain, seeking new ingredients to enliven Borago's dishes, which are prepared in traditional Chilean style cooked on hot stones and smoked with native woods. For an original twist on a Chilean staple, watch Guzman whip up a chicken liver pate with olive oil, blueberries and walnuts on an apple crust in this video and follow the recipe in your own kitchen.

Chef Tomas Olivera: The Upstart

Young and daring, Chef Tomas Oliverais taking on Chile's masters with his treatment of sustainable seafood. His savory approach is showcased at CasaMar in Santiago, his first personal project after a celebrated six-year stint at the nearby Ritz Carlton Hotel. Sweet also has a place on Olivera's menus, as he shows Foods from Chile fans in this video demonstrating how to make an antioxidant-rich fresh-berry dessert with condensed milk, a perfectly sweet and light concoction to round out a sumptuous meal.
