Chef Spotlight: Darryl Harmon of SLATE in NYC

Chef Darryl Harmon is a award-winning celebrity chef and a national brand ambassador for Certified Angus Beef®. Chef Harmon is the Executive Chef for The Lure Group, which includes Slate in New York City.

Broadwayworld.com had the pleasure of interviewing Darryl Harmon for our "Chef Spotlight."

What was your earliest interest in cooking?

I used to help my mother in the kitchen as kid before I moved to Atlantic City where I began my career.

Who were some of your career mentors?

I have to give credit to my mother where I learned how to flavor food. My first mentor in culinary was a chef named Dallas Dyer where I studied his style and techniques at Bally's Park Place in Atlantic City. Last was Chef Willie Lewis, President of The American Culinary Federation Professional Chefs Of South Jersey Chapter which I served as First Vice President

What culinary styles have influenced your career?

I have worked with many cuisines in Atlantic City. The biggest influence was when I worked with Greek inspired restaurant in Philadelphia at The Water Works Restaurant.

What do you consider the most distinguishing features of your work as a chef?

My approach to culinary is a 100% attack on the senses. I've created cool signature dishes at Slate like Philly Cheesesteak Beignets, Spicy Tuna & Crispy Rice Sliders and Sweet & Sassy Wings.

What is your favorite meal?

I'm a Steak & Potatoes Guy. My Favorite Meals are as Follows:

Philly Cheesesteaks With House-Cut Fries, Certified Angus Beef Dry Aged Bone-In Rib Eye Steak, Garlic Pomme Mousse, Grilled Asparagus

Tell me a little bit about your restaurant for our readers.

Slate, which has been a staple in Chelsea since 2000, has undergone a major 2-million dollar facelift.

The massive 16,000 square foot adult playground, which now boasts three bowling lanes, a secret karaoke room, a BYOB (Be Your Own Bartender) pouring station with 20 adult beverages on tap and a 20-foot slide to get partygoers from the top to ground floor without having to lift a foot. That's in addition to ping pong, pool tables, Skee-ball, pinball and an 8-player foosball table.
