Could we see Wicked go to a Vegas show, with just one act like all the Vegas Shows, since we already have mamma mia, lion king, jersey boys, spamalot, and Phantom.
and would they cut anything out or just do it as 1hr 45min non stop?

There's no logical way to end the show with Defying Gravity, if it were one act. And you'd need some time after that number to not only get Elphaba down, but get the flying rig off the stage.

Like one of the last threads about Wicked in Vegas have already stated, Wicked is currently in LA and moving to San Francisco. Therefore there is really no need to put in in Vegas.

The production at Universal Studios Japan ends with Defying Gravity, in that production, they leave out Fiyero, Nessa, and Boq.

Also, you have to realize one thing. That most of Wicked's core audience members are way to young to be hanging out on the strip. If Wicked didn't have a tween fanbase, then maybe there would be a chance for it to happen. And, keep in mind, that the resorts that are housing shows usually like to be the only one housing them in the west coast for a long while. With Wicked moving to San Fransisco, that is not likely going to happen.

I understand that, I'm just saying that the storyline could theoretically be tweaked so that DG makes a logical finale for a one-act production.

This is how the Universal Theme park version is set up story wise. It shows the girls at the Wizard's. And, then it shows how they got there, finishing with them still at the Wizards palace and then ending with Defying Gravity, all done in thirty min. I doubt that this would work in Vegas. In a theme park, yes. In Vegas, no.
