This Sunday, Spike invites you into the world of underground restaurants. Led by award-winning chef and MasterChef judge Graham Elliot, Covert Kitchens is a one-hour special set to debut October 20 at 11 PM, ET/PT. Get a sneak peek below!

Now a fixture all across America, these one-night-only culinary events are put on by some of the world's top chefs in alleyways, train cars and even tattoo parlors.

It all has to come together in 36 hours - the food, the setting and the service.

Elliot puts aspiring chefs to the ultimate culinary test as they compete and potentially land a job at one of the nation's top kitchens.

Elliot serves as a mentor to the aspiring chefs, guiding them through their menu, concept and even taste-tests everything along the way.

In the special, top American chefs Nancy Silverton, Michael Voltaggio and John Shook decide whether a chef has what it takes to turn a Los Angeles auto garage into a fine dining establishment in just over one day.

Covert Kitchens is produced by Shine America, the studio behind such popular series as MasterChef, MasterChef Junior and The Biggest Loser.
