been listening to Jeremy Little's version of "If I Only Had a Brain" and love the acoustic interpretation

I don't know a lot of them, but Eden Espinosa doing Gravity/Defying Gravity gave me chills when I heard it.

Rachel Bay Jones (Catherine in the Pippin revival) has a wonderful CD of these, called Showfolk.

 

Not quite unplugged, but The Manhattans do an amazing Seventies Motown version of "Tomorrow."

Not acoustic, but Kelli O'Hara did an a cappella performance of "To Build A Home" with the NY Times In Performance and it is stunning.

I wouldn't classify Streisand's rendition of "Tomorrow" unplugged. It was great, but she never does anything unplugged...always produced to near perfection.
