I saw Matthew Bourne's production of Sleeping Beauty in Los Angeles and really liked it a lot. It was more ballet than Broadway, but I found it really beautiful.
I would love to see what Disney would do with it, as well.
I always thought, as dated as it might be, Bedknobs and Broomsticks would be cool….with the flying bed and undersea scenes. And bring in Angela as Eglantine Price.
I, too, would love to see "Maleficent" or "Mulan," or for that matter, any of the newer movies where the female character behaves heroically. "One Hundred and One Dalmatians" might work if the dalmatians are represented by adorable puppets and marionettes.
Perhaps "The Parent Trap" would work if the story were changed a bit -- having parents split up and deliberately separate their twins is appalling. It might work better as twins being adopted into separate families, where each set of parents then splits up. Also, the twins should be switched after they meet, a la "Freaky Friday" -- perhaps one can be an actor and one can be the child of a politician.
Also, now that Disney has the rights to "Star Wars," how about doing that? "Come over to the dark side, my son. It's lucrative and much more fun." JUST KIDDING!

Audrey, the Phantom Phanatic, who nonetheless would rather be Jean Valjean, who knew how to make lemonade out of lemons.
