Bright Star Chicken and Waffles

Ingredients:

FRIED CHICKEN

-2 large chicken breasts
-1 stick of butter
-1 Cup Flour
-1 Cup Panko Breadcrumbs
-2 Eggs
-1 tsp salt
-Pepper to taste
-Cayenne Pepper to taste

WAFFLES

-2 Cups flour
-1 3/4 milk
-2 eggs
-1 stick melted butter
-1 TBSP sugar
-4 tsp baking powder
-1 TBSP vanilla
-1/4 tsp salt

Directions:

-Cut 2 chicken breasts into small pieces.

-In a large zip lock bag combine flour, salt, pepper and cayenne pepper. Add chicken pieces and shake until all chicken is coated with flour mixture.

-Scramble 2 eggs and place in bowl. Place breadcrumbs in bowl.

-Take each piece of chicken and cover with eggs then breadcrumbs.

-Place stick of butter in pan and melt in the oven just until sizzling. Be careful not to burn the butter.

-Place breaded chicken in pan.

-Bake at 425F for 5 minutes. Take out and flip chicken. Bake for another 5-10minutes depending on the thickness of your chicken pieces.

-Mix flour, sugar, baking powder and salt.

-Add milk, eggs, melted butter and vanilla.

-Make waffles in a waffle maker as crispy as desired.

-Cut into 4 pieces.

-Stack waffle and chicken together with a tooth pick.

-Finish with ranch dressing and enjoy like a true North Carolina native!
