Summertime brings a wealth of seasonal fruits for families and friends to enjoy at barbecues and parties. Be sure to take advantage of the variety of in-season fruits to end every summer meal on a succulent note!
1. Peach Cobbler. Toss peaches and sugar and place in a baking dish. Then make batter and drop spoonfuls of it on the mixture, and bake until brown and bubbly.
2. Super Simple Sorbet. This light, delightful dessert only has three ingredients: frozen strawberries, yogurt and sugar. Puree the trio, serve immediately, or freeze.
3. Warmed Berries with Honey and Fresh Cheese. Combine half the berries and honey and cook over low heat. Combine vanilla bean seeds and cheese in a bowl. Spoon the cheese mixture evenly into six small bowls, then top with the warm berry mixture.
4. Nectarine and Berry Crumble. This scrumptious dish can also be adapted if you don't nectarines and raspberries at the readyjust make sure it is ripe and at the peak of its flavor. The topping can be toasted in the oven while the fruit is cooking on the stovetop. To make the topping, combine whole wheat flour, almond four, and sugar, then bake. To prepare the filling, cook nectarines and sugar, then add raspberries, vanilla and nutmeg.
5. Berry Shortcake. Toss berries and sugar in a large bowl. Beat cream and sugar in another bowl. Spoon the berry mixture and whipped cream over halved biscuits and make a sandwich.
6. Strawberry Cheesecake Pops. This chilled, summery twist on cheesecake is made with a blend of fresh strawberries anda Greek yogurt-cream cheese mixture, then dipped in graham cracker crumbs, poured into molds and frozen.
