Charles collaborates on seasonal menu development to contribute original cocktails and reimagined classics
Charles Christie is an East Coast based bartender and mixologist currently working at Allendale Social, where he is developing and refining the cocktail program. Part of a new wave of young hospitality professionals, he has established himself through a disciplined approach to technique, a dedication to the craft, and a talent for connecting with guests.
At Allendale Social, he collaborates on seasonal menu development, contributing original cocktails and reimagined classics that align with the restaurant’s identity as well as his own hitch centers on an innovative and fresh approach. He often revisits classic frameworks, introducing thoughtful variations in base spirits, texture, and presentation to create drinks that feel both familiar and distinct. His signature cocktails such as The Hoboken, a bourbon-driven riff on the Toronto with Luxardo, and Cucumber Cloud, a sake-forward egg-white cocktail, reflecting his love for classic technique with a modern, deconstructed approach. Outside the Social, Charles brings his talents to innovative projects. Most recently an intimate production of La voix humaine for Modernized Opera Initiative. These projects reflect his interest in expanding his trade in collaboration with young artists, where cocktails can complement and enhance storytelling in a more immersive setting.
For Charles, a cocktail should do more than taste good; it should contribute to atmosphere and transport the guest not just to a place in time but to a feeling. His work is grounded in hospitality as much as technique, with a focus on creating a cohesive guest experience that extends beyond the glass. As he continues to develop his voice within the industry, he remains focused on expanding his knowledge and contributing to the evolving landscape of modern mixology.
When did you first become interested in cocktail culture?
My interest in cocktail culture developed early in my hospitality career, but it really took shape when I began studying classic cocktail structures. Once I understood that every great drink is built on a framework, balance, dilution, texture, that's when it became more than just making cocktails and it became where I discovered the culture and art of a perfectly executed cocktail.
What innovations in mixology and bartending do you find fascinating?
I’m especially interested in the way bartending is borrowing techniques from the culinary world, controlled dilution, texture manipulation and the most exciting to me is clarification. There’s also a growing appreciation for lower-ABV and alternative bases like sake and fortified wines, which opens up a completely different range of expression.
How do restaurant and bar guests encourage your creativity?
Guests at Allendale Social are a huge part of the creative process. You start to recognize patterns of what people gravitate toward, what surprises them, what they remember. Sometimes a simple request or preference can spark an entirely new direction. It keeps you grounded,but also opens alot of doors to new creativity and creating a drink that's made just for that one guest.
What are your preferred “classic cocktails” and why?
I tend to gravitate toward spirit-forward classics like the Toronto, the Negroni, and a well-made boulevardier. They’re unforgiving in the best way—there’s no room to hide, so technique really matters. I also appreciate how adaptable they are; a slight shift in ratio or ingredient can completely transform the experience while still respecting the original structure.
What are some of your favorite infusions and how do you like to use them in drinks?
I like working with subtle, clean infusions,things like cucumber, green tea, or light herbal elements because they enhance rather than overpower. The goal is to build layers without losing clarity. I’m also interested in using texture as part of that process, whether that’s through egg whites, emulsions, or even carbonation.
Tell us about a few of your signature cocktails and why they are distinctive.
One of my signatures at Allendale Social is The Hoboken, which is a bourbon-driven riff on the Toronto. It incorporates Luxardo in a way that adds depth and a slight richness while still maintaining that classic backbone of spirit forward and a slight menthol herbal kick.
Another is Cucumber Cloud, which is a sake-forward cocktail with egg white and muddled cucumber. It’s lighter, more textural, and a bit more unexpected, something that feels delicate but still structured. Both drinks reflect how I like to work: starting with a classic idea and then reinterpreting it through a more modern lens.
Give us your perfect pairing for a cocktail and a culinary selection.
I think about pairings in terms of contrast and balance. A spirit-forward cocktail like a Manhattan or a Toronto works beautifully with something rich like a well-prepared steak or braised dish it cuts through the weight. On the other hand, something lighter and more aromatic, like a sake-based cocktail, pairs really well with seafood or crudo. It’s about letting each element elevate the other without competing.

At Allendale Social, the focus is on delivering a complete dining experience where the bar program plays an equal role to the kitchen. The environment is refined but still approachable, which allows for a lot of creativity within a structured setting. I collaborate closely on seasonal menus, developing cocktails that complement the food while also standing on their own. It’s a place where technique, hospitality, and atmosphere all come together and that’s ultimately what I’m trying to achieve with every drink.
