Busy Jennifer Lopez spends her time off from judging the final season of "American Idol" starring in the police drama "Shades of Blue" and performing in Las Vegas. She joined NBC's TODAY this morning to sit down with Matt Lauer and admits that she has "a lot of irons in the fire," but has had opportunities in the past year that were hard to turn down.
