Albert D’Angelo 35-55, Chef specializing in Italian cuisine, owner of new restaurant
Hefty physicque, balding, antic/neurotic/creative genius.
Willa Frank/Torrey 19-25. Willa: 25. Restaurant critic. Glamorous, thin, fashion model-type. Insecure and emotionally distant. - Torrey: 19 year-old punk rocker, works as restaurant’s janitor.
Eduardo: Chilean waiter who pretends to be Italian, late 20's to early 40's.
Roque/Fulgencio: 30’s-50’sYucatecan dishwasher & Roque’s identical cousin -Roque: Yucatecan dishwasher. Simple man, operates on a very emotional level. Fulgencio: stalwart, good natured, loyal worker.
