"Losing To Win!" author Randy Jernigan says his next cookbook will be a healthy take on Southern cooking titled "Southern Cooking Made Healthy."
Jernigan admits that before his near fatal collapse and frightening emergency room experience written about in his first cookbook, he was about to publish a very unhealthy Southern foods cookbook but decided to pull the book back and publish the tips and recipes that helped him lose 158 pounds and beat his diabetes and hypertension problems. Now Jernigan will revisit the idea of his beloved Southern cooking recipesbut this time they will be healthy and Nutritious. "There's no need for Southern food to always be deep-fried and heavy: Like all good regional cuisines, they rely on fresh, season foods and a deft hand at seasoning," explains Jernigan. According to the author, Southern cooking incorporates many regional influencesfrom old English cookery to Cajun and Creole spices. It's not easy to define.
