It's hard to say for plays. A few will extend from the Tonys - but not likely many. It really depends on nothing but the box office. (Well, I suppose casting too if a name is what is selling it.)
Summer is not known for many new productions, but rather the fall. You really just need to keep an eye on announcements.

If Frankie & Johnny extends by even one week, that might be your only option aside from Mockingbird and Harry Potter.
That's a tough time of year for plays. Ferryman will close July 7 (and will have run 9 months), Constitution will be gone (2nd Stage has a new play opening at the Hayes in September), and everything else has a summer closing date and isn't doing big enough business to warrant extensions. Most of the new shows wouldn't start previews til end of September or later.
If you really want to see plays, check the schedules for non-profit Off-Bway theatres?
Labor Day (or any holiday) weekend is often a good day to see shows, though, since unlike most places (which get busy on holiday weekends), NYC empties out. I saw Bette in Dolly from the second row aisle in the orchestra because they held so many premium seats back that they couldn't move that weekend...

And also a great week for hotel rates. Most of the big hotels which depend upon convention business have lots of cheap rooms. We got the Mariott Marquis for $230/night a couple of years ago. (Booked through them, not a Priceline or Hotwire bid)
