For the audience, a preview performance is just like a regular performance! The only real difference is that the creative team is still on deck to potentially make changes and tweaks before the next performance. So yes, you will still get a playbill
As for stagedoor, it's up to the actors. But there isn't really a "no stagedoor during previews" policy.

Playbills are given out, but for "a show in trouble" you may have difficulty in figuring out what the heck is going on.
I remember being at a preview of SEESAW and the information provided in Playbill bore little resemblance to what I was seeing on stage.
