I would absolutely recommend Anastasia - I really enjoyed it. It has a great score and is very beautiful from a visual perspective. Miss Saigon is definitely not one of my favorite shows, but I've heard good things about some of the actors in this production.
Outside of the shows you mention, Waitress is a solid, fun choice, and I know a lot of people who have really liked Kinky Boots, although it never really clicked with me personally.

Depending on how "soon" you're going, if Band's Visit is in previews, I highly recommend you go see it!
I also am a fan of Anastasia; the score, set, and costumes are all beautiful, and the cast are so talented and work expertly together.
If you can, Come From Away is also a great choice! You can choose to do rush or standing room if you want to save some money!
Speaking of rushes, you might also try checking out War Paint! It's quite easy to rush, and although the show isn't perfect, the two leads are absolutely amazing.
Two other easy rushes that are, in my opinion, good shows are Bronx Tale and Play That Goes Wrong. Bronx Tale is a nice, wholesome show that has a good score, great choreography, and an amazing cast. Play That Goes Wrong is an absolutely hilarious show. If you like farces, go for this one! The original cast just left less than a week ago, so I can't speak to how this new cast works, but I'm sure that, since the original cast did the casting for the replacements themselves, the new cast are pretty great as well!

Although not on your list, I also recommend School of Rock and Come From Away.
Miss Saigon is an amazing show but it's a little heavy and serious so I don't know if you'd rather see a fun musical

Hello, Dolly! is a must see and is the epitome of classic Broadway. If can't get/afford tickets to see Bette, go see it with Donna Murphy.
Anastasia is my favorite musical of all time (to no one's surprise). It's a genuinely breathtaking night at the theater. Please stage door if you can! The cast is so wonderful and they all take their time to greet you and sign and take pictures.
Hello, Dolly! God I love this show so much. Hello Dolly, a comedy about couples in the 1800's, made me cry when the overture started. The sets and costumes and plot and actors and production value is incredible. You have to see this (preferably with Donna, Bette is a treat as well)
