I just noticed Mothers and Sons will be playing until the beginning of July (last I saw it was closing June 8th). I arrive June 10 and will be able to see Mothers and Sons. However, I need to eliminate one show now. So.... what should I skip among Bullets, Newsies and Rocky? Thanks!

I hate to burst your bubble, but The Realistic Joneses is the show that was just extended to July. Mothers and Sons is still set to close June 8th and, considering it's grosses, it is highly unlikely that it will be extended.
Unless it wins the Tony or a few, I don't see the scenario where you need to eliminate a show from your list as being very likely an issue.
Words don't deserve that kind of malarkey. They're innocent, neutral, precise, standing for this, describing that, meaning the other, so if you look after them you can build bridges across incomprehension and chaos. But when they get their corners knocked off, they're no good anymore…I don't think writers are sacred, but words are. They deserve respect. If you get the right ones in the right order, you can nudge the world a little.
You really think they won't play a single show again if they don't win a Tony? I mean, the poster wants to see the show two days after the Tony Awards. Even if they post a closing notice, that week should be safe, no?
Tickets were only on sale through June 8th the last time I looked last week. Now the official website, telecharge and broadwaybox all have tickets/discount codes through July 6th. I was surprised, but it appears to be true.
Ah, I hadn't seen the close proximity to the OP's dates and the Tony's. Yeah, MOTHERS AND SONS should make it to the week in question. Unless things get *real* bad. But it should be in play.

"Wow, I saw Newsies last year and it was great. Is the cast THAT bored now?".
Sadly, yes. This is Broadway, the best theater district in the country. People don't want to pay big bucks to see bored performers who couldn't care less. It's like step up or step aside boys!
THIS WHOLE POST MIGHT BE STUPID, I'M SORRY IF IT IS. But, if Corey is really bored, why can't he just leave if he has several opportunities/job offers? (I imagine that he has received offers like Jeremy). And I imagine that he's auditioning for several things, so that's obviously why he's still there. Same with the other people.
It depends on what you like. For big, flashy, choreographic, Newsies. For socio-political family drama, Mothers and Sons. For mindless entertainment with a terrifically staged final sequence, Rocky. Or see Bullets for the design elements.
