  1. Pizza with zucchini. Who doesn't love pizza? Grilling adds a new texture and taste to this family favorite. Toss zucchini with garlic, oil, oregano, red pepper and salt before grilling. Divide pizza dough into four balls and transfer them, one at a time, to large cookie sheets to form. Then, carefully place them on the grill and cook on both sides. Divide ricotta and Gruyre cheeses and spread evenly over the crusts. Top with zucchini, Parmesan and basil and cook until cheese melts.
  2. Zucchini cupcakes. This hand-held treat is a little bit of spice topped with sweet caramel frosting. Beat eggs, sugar, canola oil, orange juice, and almond extract. Combine flour, cinnamon, baking powder, baking soda, salt, and ground cloves, then gradually add to egg mixture and then stir in zucchini. Fill muffin cups and bake. The frosting is a combination oF Brown sugar, butter, milk, vanilla, and confectioner's sugar. Delectable!
  3. Fried zucchini. Zucchini strips get breaded with a Panko and Parmesan cheese mixture before frying until crisp. First, stir the Panko, Parmesan and salt in one bowl; and whisk eggs in another bowl. Working in batches, zip the zucchini in the eggs to coat, and then dip into the Panko mixture to coat completely. Place the strips on a baking sheet and then fry them in a heated, oiled frying pan.
  4. Zucchini bread. This is probably the most popular zucchini recipe, and great way to incorporate more vegetables into your child's diet. Combine flour, baking powder, cinnamon, salt, and baking soda in bowl. Then combine egg substitute, canola oil, grated lemon, vanilla extract, and an egg in another bowl. Add zucchini and stir. Then add the flour mixture and walnuts. Divide the batter between four loaf pans, bake and enjoy!
