Fonda Restaurants in NYC Present a Festive Mexican-French Holiday Menu

To celebrate the holidays, Chef Roberto Santibañez is pairing the culinary ingredients and techniques of his native Mexico with those he studied at Le Cordon Bleu in Paris. He has crafted a menu to savor the best of both cultures and both cuisines.

"The holidays are a time to reflect on our traditions," recollects Santibañez. "On a recent visit to my childhood home, I discovered menus from my three former Mexico City restaurants where I began merging my grandmother's cocina with my French training. For this season, I've prepared special dishes that feature some of my favorite food memories."

Served from December 22nd to 30th (closed on Christmas day).

Vol-au-Vent de Cuitlacoche a la Creme d'Estragon
Puff pastry case filled with cuitlacoche, covered with a tarragon cream sauce and pico de gallo

Bisque de Crevettes Oaxaca
Shrimp bisque soup seasoned with Oaxacan pasilla chilles garnished with diced shrimp, black beans and roasted corn kernels

Morue Sautée aux Deux Sauces
Pan seared cod filet served with a saffron sauce and a roasted tomato jalapeno molcajete salsa

Filet de Bœuf Grillé, Demi Glace au Mures, Pommes Croquettes
Beef tenderloin medallions served with a port wine, blackberry chipotle demi-glace sauce
and potato croquettes

Clafouti aux Poires Chaud, Glace au Caramel Salée et Sauce Goyave
Warm pear cake served with salted caramel ice cream and guava sauce

*The menu will be served at all three Fonda restaurants except Christmas day when we will all be celebrating with our families.
