What was your earliest interest in cooking?

I helped out running my parents restaurant at the age of 10, doing mostly cleaning, light cooking of cheesesteaks & burgers.

Who were some of your career mentors?

Over the past 20 years of mainly being self-taught, my mentors have been Chris Albrecht, Larry Robinson & Gabriele Griglione.

What culinary styles have influenced your career?

Working with Terra Momo Group for the past 15 years, I have mainly being influenced by Italian & Mediterranean cuisine and was introduced to the Spanish culture of Paella and Tapas.

What do you consider the most distinguishing features of your work as a chef?

Distinguishing features include my dedication to the craft, ability to multi task and to wear many hats, my ability to teach and guide beyond cooking and to develop my passion of cooking for business and a high volume establishment.

What is your favorite meal?

Offal's such as, tripe, sweet breads, liver etc..
