With almost 20 years of experience, Chef Dusmane's biggest culinary influence is his family. Growing up in France, he found his passion for cooking by working in his family's restaurant with his father, and six brothers and sisters. Chef Dusmane attended culinary school in Paris, France and shortly after moved to the United States to continue his culinary career. He previously worked at Heartland Chop House and Heartland Brewery before landing at Morton's The Steakhouse in Stamford, Connecticut for the last ten years as the Executive Chef. Currently, Chef Dusmane is the Executive Chef at the iconic Mastro's Steakhouse in New York City and is known for his specialty in classic steakhouses. Mastro's Steakhouse is recognized for their world-class service, highly acclaimed cuisine and live entertainment.

BWW had the opportunity to interview Executive Chef Dusmane Tandia about his career and Mastro's Steakhouse in New York City.

What was your earliest interest in cooking?

Cooking with my father. We had a family owned restaurant in Paris.

Who were some of your career mentors?

Definitely, my father.

What culinary styles have influenced your career?

French and African cuisines.

What do you consider the most distinguishing features of your work as a chef?

My ability to work with my team.

What is your favorite meal?

An African dish called Fouto. It's like Moroccan couscous with lamb and snap peas.

Tell me a little bit about your restaurant for our readers.

As a fine dining steakhouse, we are a unique restaurant, unlike any that I've worked at. The people, atmosphere, and ambiance is inviting and provides a memorable experience.

Mastro's Steakhouse is now open in Midtown at 1285 Avenue of the Americas (Corner of 52nd Street and 6th Avenue), New York, NY 10019.
