I was thinking of rushing a Sunday matinee show this weekend, are there any shows that are particularly easier or harder to get tickets to? I'm already seeing Waitress, Fiddler, Wicked, and She Loves Me

What do you want to see? I think the Les Mis line isn't too bad right now. I would also consider the Book of Mormon lottery if you haven't seen that. I did it in January and there wasn't a ton of people trying. Here are all of your options:

I think a reasonable rule of thumb would be the better a show is doing, the closer to 100% capacity it's achieving, the harder it will be to rush. This is for a variety of reasons including more people wanting to see it cause it's popular, less discounts and availability on TKTS so more people will try to rush if they are budget constrained and the box office since they can sell every seat will be likely to offer as few rush tickets as possible. The converse obviously is also true.  I don't know what you've already seen but if you haven't seen Curious Incident, it worth seeing before it closes and it's a pretty easy rush. I'd say the same about Something Rotten! and both of those shows also have lotteries which gives you an additional opportunity. Of course, you can get rush tickets for any show that offers them. It's all a matter of how early you are willing to get there.
