On their website, it states tickets are only available through June 12. I saw in a review that it is open until July. I can't find anything definite that it is open ended.
The reason I ask is I am planning on being in NYC the weekend of July 22, and would love to see it.

No. It's a Roundabout show. They're never open ended. The dates are on their website. An extension has yet to be announced, but is possible. But it is certainly not open ended.
Roundabout will just continue extending. They will not make it open-ended. The last big hit they had was Anything Goes several years back, and I suppose, the Cabaret re-revival. Both just kept getting extended. As a non-profit, it would be strange to announce an open-ended run. I also don't think their subscribers would be happy that one of the two Broadway houses they own is locked up with an open-ended run of a show.

They have Holiday Inn opening in September so I imagine they'll extend She Loves Me to mid to late July unless they decide to delay Holiday Inn by a few weeks

airlines theatre?

Yes, but it wasn't very successful. She Loves Me has never really had great financial success. I would think this might extend extend this production a couple of times, but doubt they will move it to another space.
